Haleem - Decadent stew composed of chicken, lentils and wheat
A traditional Haleem is made by firstly soaking wheat, barley and gram lentil overnight. A spicy meat gravy called Korma is prepared until the meat becomes tender. Various meats can be used, for this menu we went with chicken. The wheat, barley and gram are boiled in salt water until they are tender. The cooked wheat, barley and lentils are then mixed with the chicken gravy.

Lamb Shank Pulao - Slow-cooked braised lamb with aromatic spices and heirloom basmati rice. This is a dish you would typically find on special occasions in Muslim homes in cities like Delhi and Lucknow. Lamb itself is slow-cooked for hours in spices, which makes it very tender. The rice is cooked in the stock of the lamb, which enhances the flavours of the overall dish.
